You need to take:

  • Three kilograms of beef bones, preferably grass-fed and free-grazing.
  • Three to four liters of water to cover the bones
  • One tablespoon of apple cider vinegar
  • One large carrot
  • Three stalks of celery
  • Twenty grams of ginger root
  • One teaspoon of coriander
  • Two bay leaves

Wash the bones, place on baking paper and bake in the oven until golden brown (about an hour at 190 degrees). This way the future broth will become aromatic and acquire a beautiful and appetizing color.

Pour cold water over the bones, add apple cider vinegar, and bring to a boil. Remove the foam, cook over low heat for 20-24 hours. Two hours before the end of cooking, add onions, carrots, celery stalks and spices, and half an hour before the end, add bay leaf and salt.

Strain the broth and remove the fat. Cool, pour into portions, freeze. Make various soups based on this broth.
