But potatoes have a peculiarity: when cooked, they become a product with a high glycemic index when hot or crushed. In other words, in this form, it is extremely quickly absorbed and increases blood sugar levels – this makes the product potentially harmful for diabetics.

“The use of boiled potatoes should be limited to people suffering from obesity or diabetes,” Kobozeva told Lente.ru.
Also, the doctor added, potatoes are not recommended for people suffering from chronic kidney disorders. Healthy people need to carefully monitor the quality of the product: for example, improperly stored potatoes become a source of hazardous substances.

The specialist noted that in autumn, in addition to potatoes, other plant products are available. Kobozeva advised to eat nuts, pumpkin, broccoli, cauliflower, zucchini more often instead of potatoes. As for boiled potatoes, they are much more useful when chilled – after being in the refrigerator, resistant starch is formed in it, which improves the condition of the intestinal microflora.
