Nutritionist Mariyat Mukhina: potatoes have a high glycemic index and increase blood glucose levels as sharply as anything sweet.

Nutritionist Mukhina warned in an interview that addiction to potatoes negatively affects human health – weight gain and the development of diabetes are associated with such a habit. Especially harmful in this regard are potatoes cooked under conditions of aggressive heat treatment, or chopped. Fried potatoes and mashed potatoes acquire a high glycemic index (GI), indicating that after eating them, blood sugar will rise sharply. Nutritionist Mukhina said that such potatoes increase blood sugar levels like sweets.

“If glucose has a glycemic index of 100, then fried potatoes have 95, mashed potatoes have 90, chips have 80. That is, potatoes almost as quickly increases the level of glucose in the blood as sugar,” the specialist shared with Moscow 24.
Mukhina stressed that the risk of diabetes can be very significant if a person eats processed potatoes daily and in large quantities. According to the doctor, the potato is a sufficiently high-calorie product, and in the absence of sports, intense physical activity, the carbohydrates absorbed with it will be deposited in fat.

The doctor also reminded that the potato is a rich source of starch, which prevents the absorption of iodine, which important for maintaining thyroid health. This is another reason to minimize its use, the nutritionist believes.
