The doctor noted that potatoes are a product whose glycemic index changes depending on the method of preparation. If potatoes are mashed or fried, the glycemic index increases sharply – this means that after eating them, the blood sugar level increases significantly. Sharp jumps in blood sugar are dangerous because the body reacts to them by releasing insulin, and if this happens often, insulin resistance occurs, against which diabetes develops.
