Some of the antioxidants found in cheese may help protect blood vessels from damage caused by a high-salt diet, according to a study from Pennsylvania State University.

The results of the study are published in the Journal of Nutrition. Scientists state that with regular consumption of foods high in sodium, blood vessel dysfunction occurs – however, cheese helps protect blood vessels from salt damage. This effect, in particular, occurs if four servings of cheese are eaten a day.

The main component of salt, sodium is an important mineral, but the body only needs it in small doses – no more than 2300 mg daily. Too much sodium in the diet is associated with the risk of high blood pressure, hypertension. In a study reported in the Journal of Nutrition, after a week of eating high sodium, participants' blood vessels responded poorly to acetylcholine, which helps them relax (important for normalizing blood pressure). But when they included cheese in their diet, this problem disappeared.
